Well, he's on nitrous, obviously...................
Sorry. Just figured I would get it started.

well, I know how a street carb works, how does so much fuel end up in the motor after a run?

If you get a chance go watch practically any PS team servicing their cars after a run. First thing is to remove the plugs and spin the motor over. It produces a couple of good squirts out of each open spark plug hole. The difference between your dragster and a PS car is you have the convenience of not having to make headers fit between frame rails, oil pan fittings, body etc. Besides all the twist and turns of a PS header, the O2 then has to be fit somewhere. Some header guys will put a sensor at the bottom of a pipe. You have to be nasty rich to visibly burn fuel in the pipes is true and understandable. You have to be nasty rich to see it because the engine is running. The PS engine isn't running at the point of the header fires. All that is required to extinguish the header flames is the driver starting the engine up and the flames are gone.
BTW, I make a slick four stage nitrous controller that replaces the digisets and relays. Its getting into more and more door cars, SpeedTech had it on Balooshis ADRL car last race. I want to get it into some TD cars, check it out. It also had four other outputs so it can do the auto shift also. If interested I'll make you deal on one.

Maybe the PS guys kill the ignition but leave their foot on the floor (e.g. carbs open). That would surely load up the engine on fuel.
