OE keeps removing some attachments from email that I receive. Is this some kind of setting that I did? Is there a way to prevent OE from doing this?

The same thing is happening to me from only ONE of my customers. I'm thinking it's on her/their end.

Try this and report back, (Make sure your anti-virus software and anti-spyware software is up to date):

Click on the Tools pulldown menu in Outlook Express
Click on Options
Click on the Security tab
You will see an option for: "Do not allow attachments to be opened or saved that could potentially be a virus". Make sure this is NOT checked.
Then make sure you click Apply at the bottom of this screen, and then OK.

Could also be a firewall setting ... some firewalls automatically filter file extensions such as .zip and will also filter any .doc (Word) or .xls (Excel) with macros enabled.

What Ted said....

Didn't OE just have an online update lately? I have had some problems in the past couple of weeks (files not opening, lack of access to existing files) and my neighbor has had OE regularly shut down on a whim lately as well.. I rolled back to pre-update settings, and we reset her Internet settings to factory default, and now both of us seem fine- leads me to believe that it was the last update that came down that had the hickup...

Eh, I'm on Microsoft Outlook here at work.....not Outlook Express.

Do y'all know where the settings for attachments are?

Should be the same Tools Menu that Ted pointed out, Kelly.

Edit: In Outlook 2003 would be Tools/Options/Security/Download Pictures/Change Automatic Download Settings button.
