Dice all the darn vegetables
Cut up the chicken into bite size peices
Brown the chicken in a skillet with some olive oil
remove chicken from skillet and set aside
sweat the darn vegetables in olive oil
throw all ingredients into a crock pot or a heavy duty spaghetti (or pasghettee as Jen would say!) pot and pour in the chicken stock and the herbs and salt & pepper. if cooking in the crock pot, set to low and cook all friggin night or day, whichever you prefer! I like waking up to the smell of it on sunday morning. That way I am ready for the football game and lunch!!! If you cook on the stove top, keep it on a low simmer for about an hour. Cut up un-baked biscuits into quarters and put in the pot of boiling soup in shifts. Don't put them all in at once or you will have the Sta-Puft marshmallow man from Ghostbusters in your kitchen!!!. They will expand and float at the top and when they are cooked they will start falling into the soup. Stir to help them out. When they are all added, cook on low for 25 minutes. Pour in 1 cup of heavy cream about 5 minutes before serving. It is food that will hug you!!!
