Do you guys want to see categories or just a simple area to put your recipes? If categories....what would you like to see as a category?

Also do you want everyone to see the recipes or just Verified Members?
 
Crepes - Chicken Elegante and Grasshopper Crepes for desert!
An all day effort - Erin loves to get here early to help with cooking crepes.
Then, chicken breasts in tarragon sauce with mixed wild mushrooms for the Elegante in buttermlik crepes.
And . . . chocolate crepes filled with a marshmallow/whipped cream filling with mint and chocolate liquors. Topped with more whipped cream and shaved dark chocolate!
We don't do this often, but it's a famliy celebration when we do - :D
 
When making my spaghetti sauce, I use ground venison. Since it's very lean, I add a bit of olive oil when sauteing.

When making my mac and cheese, I add onion when melting the butter to make the white sauce. I also will use the taco style cheese in addition to sharp cheddar. Gives it a little zing without being overpowering.

One of my favorite recipes is for Filled Noodle (PA dutch recipe).

You make pie dough and roll it out to about 8" round.
Filling for the noodle is the combination of mashed potatoes with onion, egg, bit of garlic, bread crumbs. Put filling on half of the dough, crimp the ends shut and add to boiling water (salted). Cook until done. Remove, roll in bread crumbs and pan fry until golden brown.
Serve with gravy (Beef or chicken) or top with butter...mmmmm

I have access to two 24 inch woks, use those for fajitas and eggs when we have a big family get together. We just had a matanza (pig roast) today. 300 pound pig, enough chicharones to last for a long while. Enough chicharone grease to clog up every artery!

They use the grease to make bichochitos too.

Do you have to slow cook venison? Or is it different with ground? I've used venison for papas con carne before and it was very tough unless i cooked it really slow and for a really long time.

Nope, you can cook with ground venison the same as ground beef. Frys up just as quickly. I use it to make my chili, sloppy joes etc..and no one knows the difference. ;)
Made a big pot of sloppy joes and a girl I worked with ate and ate...all the while commenting on how she hates deer meat and would never eat it.
I had to tell her she was eating venison sloppy joes :eek: she didn't stop eating :)
 
Thanksgiving is coming! Someone post up the old popcorn stuffing for turkey recipe, please. All I can remember is "roast the turkey until the popcorn pops and blows the ass out of the turkey"!
 
Anyone have a good recipe for fish tacos?

I have a pretty good recipe that my friend gave me but I've never tried to make. I'll look it up and post it in the new recipe section (thanks Shannon!). I know they are good tacos but it calls for mahi mahi or some other fish that I never get.

At that chili cookoff we go to the BEST we've ever had was venison chili. Since they're kinda sorta technically giving it away (after you pay admission), USDA doesn't apply and they make it out of anything they want to. Alligator, Ostrich, etc.

If any of you are bored and have google earth, you can find Stone Mountain Park just east of Atlanta off of highway 78 where the cluster of landmark dots are. Pretty cool when you drop down, change the plane, and view the relief carving. The place is worth going to whether it's the weekend of the cookoff or not. Campground, restaurants, golf, riverboat, nightly laser show, etc.
 
This is really great! I go to the mater to see stories and news that make me practically smell Nitro and burning rubber.

I have been on a high protein low carb. diet for a couple of months and have lost 29 lb's .
Enter the mater today go to select a subject and wallah!

Ok, I just posted the Beef Roulades in the Mater Receipes area and I also put my receipe for "Beat Your Mama Mac -N- Cheese" It is not everyday that I give up that receipe. I am still witholding the secret ingredient!!!
