Coat potatoes with oil and place on foil lined pan.
Bake for approximately 1 hour.
Place butter in a large mixing bowl.
Remove the potatoes from oven; when done and cut each in half. (do not turn off oven)
Gently scoop out the potato and place in bowl, reserving the shells for stuffing.
Add sour cream, salt, and pepper; mix with mixer on high.
Fold in the shrimp, 2 cups of cheddar cheese and the monterey jack cheese.
Gently stuff the mixture back into the potato shells.
Sprinkle each potato with remaining cheddar cheese and paprika for color.
