Yep, Jack's 2003 Super Comp world championship dragster has a canopy.
There is also a nostalgia front engine Top Fuel dragster that currently has an enclosed cockpit..... I can't remember the name at the moment but it's a pretty cool looking ride!

And I'm sure there are a few others too...
