Mix mayo, dijon musturd and eggs together and set aside
Mix corn flakes, pepper corn and cheese together, set aside.
Dice mushrooms and sweet onions set aside.
Dunk your chicken in the egg mix, and coat thouroughly, get the mix in the slit that you butterflied the chicken in.
Then place in corn flakes and coat, get the cornflakes to coat inside the slit. Place on baking pan and open up and spread mushrooms and onions inside. Secure with a soaked toothpick.
Bake at 325 until the chicken is no longer pink in the middle.
