The tube and wire are for exhaust temperature data collection. I am pretty sure the "wires" are actually fiber optic cables so that the EM field put out by the magnetos does not interfere with the signal.
The EGT's are just standard industrial thermocouples with a standard positive and negative wire running from each to a collection box which allows the information to be ran to the computer in one cable with 8 wires from each side of the motor.
The fiber optics are used from the pickups for the timing system to the computer.
One of the reasons I posted the pic, I'm used to the covering. Also, why do some of the teams use the header brackets and some don't? You'd think the FC teams would use something with the added weight of the longer tubes.
