Begin "frying" the Ore Ida potatoes o'brien. I sprinkle lots of black ground pepper on them and have used various spices such as cajun seasoning, mexican seasoning, whatever suits your taste. I then start cooking bacon, usually 4 strips at a time nice and crispy so they crumble, but not burnt. I put four strips aside and cook the next four. By that time the potatoes are close. Once bacon is done I scramble the 6 eggs and as they are finishing (better extra cooked and dry, but thats just me) I dump the cheese in with them and mix it all in. At this point crumble up all the bacon and dump it in as well. Then, I dump the egg cheese bacon mix in with the potatoes and finish cooking the potatoes. Bring it all to a low heat in the big frying pan and use the bacons frying pan to pre heat the tortillas, takes maybe 20 seconds to warm them. Scoop the concoction into the tortillas (it takes a couple tries to figure out whats too much to roll it up), top it with sour cream and/or those yucky tomatoes and whatever else you want, roll it up, and enjoy!
