Wash the pork thoroughly in cold water after butterflying. On your prep surface, stuff chops with sliced, sauteed mushrooms and crumbled blu cheese. season with additional oregano and seasoned salt to taste. Do not overstuff the chops- more is not particularly better.. Fold close and press closed- use moistened toothpics for pinning closed thicker chops.

Preheat the oven to 425F.

Coat liberally the chops in the breading, oregano, thyme and seasoned salt mix, and place on baking pan, uncovered. Bake for 30-40 minutes (depending on chop thickness), or until edges are browned.

Serve hot with side dishes. Serves 2-4
 
Martin..speaking as an Iowa-wegian..that is truly awesome..because we have a cut called Iowa Chops that are just amazing. **picture 1" thick**
