In a small mixing bowl mix Russian dressing, apricot preserves and dry onion soup mix.
Spray Pam onto bottom of baking dish (makes clean up a little easier)
Place chicken in baking dish.
Pour mixture onto chicken
Bake at 350 F for 45 min.
Place on or next to a bed of rice. Broccoli goes great with it. Spoon extra mixture onto rice and or chicken if you would like.
The recipe is very easy to adjust to make more if need be. We use the above for 2 large chicken breasts for just my wife and myself. Growing up my mom used the same amount for 5 of us.
This dish was made by a local church group who's leader was Rev. Ripley, hence Rip's Chicken. I am sure others out there call it something different.
